Pineapple power bowl

Nothing like eating straight out of a pineapple bowl! Why we don't eat everything out of pineapple bowls is seriously beyond me - they just add a nice tangy taste to everything whether sweet or savory! This is one of my favorite post-workout power bowls and is loaded with protein and veggies and all the good carbs.

Pineapple power bowl

All you need is:

- 1 cup of quinoa

- 1 tbsp coconut oil

- 1/2 green capsicum

- 1/2 yellow capsicum

- 1 pineapple (whole)

- 1 spring onion

- 3/4 tsp salt

- Freshly ground pepper

- optional: 1 chicken breast, grilled


1- Get your pineapple ready - chop the pineapple in half exactly keeping the top. Scoop out the flesh by running a knife around and then scooping the flesh out with a spoon. Careful not to get too close to the skin so you don't puncture the bowl!

2- Pre-heat the oven to 180 degrees C.

3- Cook the quinoa by first heating up the coconut oil and stirring in the quinoa. Then add the salt, and cover the quinoa in boiling water. Let it sit for approx. 20 mins.

4- In the meantime, chop 1/4 of the pineapple flesh and store the rest in the fridge. Chop all the veggies. Once the quinoa is cooked, chuck in the veggies and let them simmer along with the quinoa for approximately 5 mins. (Note: if you are adding grilled chicken breast, simply marinate with your favorite seasonings and grill - a sweet BBQ sauce would go nicely with pineapple).

5- Add the quinoa and veggie mix to the pineapple bowls, place them on an oven tray and cover with aluminum foil. Place the tray in the oven for about 20 mins so the flavors really mesh well together.

6- Top off the pineapple bowls with some more spring onion, and that's all!

Warning: you will want to eat everything out of pineapple bowls after trying this recipe ;)!
