Easy as avo-quinoa-tuna salad

This is my ultimate go-to salad, mainly because a) it's healthy and makes you feel alive, b) it's super easy and c) you're bound to have these ingredients at home any time of the week!


Avocado quinoa tuna salad

All you need is:


- 6-8 large romaine lettuces

- 1/4 red onion

- 6 stuffed green olives

- 1 can of light tuna (your favorite)

- 1/2 avocado

- 1/2 cup quinoa

- 1/2 yellow capsicum

- Salt and crushed pepper

- 1 lemon

- Balsamic vinegar

- Honey mustard


Steps:


1- Wash and chop romaine lettuce thinly, set aside in a bowl.


2- Cook 1/2 cup quinoa searing first in coconut oil and adding 1/2 teaspoon salt.


3- Open a can of tuna, empty out the oil and set aside in a bowl. Add 1/2 squeezed lemon, 1 teaspoon honey mustard, sprinkle of salt and pepper and use a fork to mix.


4- Chop the red onion very thin, yellow capsicum into small squares and the stuffed olives. Add this mix to the tuna bowl.


5- Once the quinoa is cooked, let it cool down and add it to the bowl of thinly chopped lettuce. Add a squeeze of lemon juice, a drizzle of balsamic vinegar, a sprinkle of salt and crushed pepper and mix together. Then add the tuna and veggies mix to this bowl and mix altogether.


6- Pour the salad into your serving plate, and top up with avocado pieces. I like to add some extra lemon on my avocado for the taste.



That's all! No extra olive oil required as all the taste is already in the balsamic vinegar and honey mustard used, and also the avocado gives a nice creamy texture.
