Spinach and egg whole-wheat pizza

I know this looks complicated but don't be afraid! This was actually super easy and quick to prepare! Ok, you caught me, I may have cheated a little - I bought a box of organic whole-wheat pizza flour and I simply had to add water and a little bit of oil (the ingredients on the box were super clean and consisted of whole wheat flour, yeast, salt and oregano). You could prepare the pizza dough at home if you have them around and if you have time!

You can simply prepare the dough the night before, and bake it for 10 mins and simply store it in the fridge. The next morning, place the pizza doughs in an oven tray and fill with sautéed spinach (using olive oil and salt) and 2 eggs on each.

Let the pizzas bake in the oven for about 15-20 minutes. When ready, sprinkle some salt, pepper, and some chili flakes for the extra kick.

You can roast some cherry tomatoes on the side, this really made the egg pizza taste like a proper pizza (with tomato sauce and everything)!

You can also prep some fruits on the side. If you are not in the mood of chopping and peeling (which it seems like I wasn't that day) you can simply wash some berries. This will also make sure you get your fair share of antioxidants for the day!

This feels like a luxurious and very special breakfast. Perhaps you can surprise your special one with it some day, or maybe even treat yourself!
