Sweet potato egg boats

Nothing sweeter than having sweet potato for breakfast! This is one of the tastiest egg recipes and worth the time taken for the prep-work! Not to mention it has all the fibers, good carbs, vitamins and protein your body needs for a great start to your day. Check out this drool-worthy recipe:

Sweet potato egg boats

All you need is:

- 2 large sweet potatoes

- 4 organic eggs

- Bowl of your favorite fruits to make a fruit salad (blueberries, strawberries, kiwis, oranges, pear)


For the sweet potato egg boats:

1- I prefer to roast my sweet potatoes in advance (the night before) so that the morning prep is fast and easy. Pre-heat your oven to 180 degrees C, poke your sweet potatoes a few times with a knife, brush some olive oil and crushed sea salt and ground pepper on them, and wrap in foil. Place in the oven for 45 mins to one hour.

2- When the sweet potatoes are already (you should be able to cut through them with a knife, they should not be too soft and should be cooked straight to the middle), let them cool down, slice in half and take out majority of the flesh leaving the skin untouched. Store your sweet potato boats in an airtight container in the fridge, ready for the next morning. Good news: you can save the flesh in an airtight container and add sweet potato cubes to your salads now!

3- The next morning, take the sweet potato boats out of the fridge, place in an oven tray, add 1 egg to each. Place in the oven for about 20 minutes.

4- Once done, sprinkle some salt and pepper (and maybe also a spring onion if you like) and enjoy!
