Tropical vanilla chia pudding

Aloha! Nothing says tropical quite like this yummy breakfast! Creamy vanilla chia pudding topped with fresh mango and toasted coconut - how can anyone resist??

Vanilla chia pudding

The basic (and dairy-free) chia pudding recipe is below - if you go loco for the coco then you will totally love this creamy coconut pudding!


For two servings:


- 1/2 cup chia seeds

- 2 cups of almond and coconut milk mix (I prefer using this type of milk, I find using 2 cups of coconut milk too heavy)

- 1 tsp vanilla extract

- 1 tbsp agave syrup (you can also use maple syrup or honey)


Mix in a bowl together and leave in the fridge for about 30 minutes, then mix together again, and separate into two small serving bowls and leave in the fridge overnight.


To top this off and make this extra tropical - toast some coconut shreds and chop up some mango cubes to top it off. The combination is unreal!
