Vegan date brownies

Confession: I was meant to use my dates for energy balls but then I totally failed and ended up making these brownies with them. And now all I can say is, I'm about to have my very own date with them - mine all mine! These date brownies r vegan and sugar-free, full of protein and the good carbs we need to start our day with energy!

This recipe was a TOTAL fluke and honestly the measurements weren't 'measured' and were kind of tossed in a bowl. BUT I'm going to do my best in giving you the right-ish measurements!


For about 8 small brownies:


What you need:


16-20 seedless dates

1/2 cup oats

Handful of shredded almonds (about 2-3 tbsp)

2 tbsp organic peanut butter (check ingredients for palm oil-free)

1 tbsp coconut shreds

1 tbsp coconut oil

1 tsp vanilla extract

1/2 cup almond milk

3/4 cup flour

1/2 tsp baking powder


Steps:


1. Preheat the oven to 180 degrees C


2. Place the seedless dates in a bowl and cover in boiling water for 10-15 mins


3. Once the dates are soaked, carefully remove them from the hot water (set the water aside and do not throw it - you will need it later!) and place them in a blender along with the oats. Add 1 tbsp of the hot water gradually while blending until the mixture becomes paste-like. Remove from a blender and set in a bowl.


4. In a separate bowl, mix the flour together with the baking powder.


5. Add the shredded almonds, peanut butter, coconut shreds to the same bowl of the dates and oats mixture and mix together using a spoon (or your hands). Then add the coconut oil, almond milk and the vanilla extract and mix.


6. Gradually add the flour and the baking powder mixture to the date mixture bowl stirring using a spoon or your hand (make sure it's mixed well)



7. Pour the batter on a baking sheet in a small rectangular oven tray and place in the oven for 40-45 minutes or until toothpick comes out clean


To store: place in an airtight container and keep it in the fridge for up to 5 days -if you can keep it that long ;)!


Enjoy with a nice hot cup of coffee in the morning ;)!!!
