Apple cinnamon pancakes

There are a very few things that are yummier than a pancake. One of them is a stack of pancakes. Another one is a stack of apple cinnamon pancakes! YUM! These require no wheat of any sort, and no sugar either. Check out my basic recipe for cinnamon pancakes below!

Apple cinnamon pancakes

Note: I want to give a special thanks to my amazing friend Nadine Karadag for introducing me to this pancake recipe, it is a vegan recipe and extremely delicious - you won't believe they're healthy!

All you need is (for a stack of 10-12):

- 2 cups oats

- 1 cup almond milk

- 1 ripe banana

- 1/2 tsp cinnamon

- Optional: 1 scoop vanilla whey protein

(Note: you may also add 2 dates, but if you want to skip the sugar, the banana will suffice).

Blend these ingredients using your blender or a nutri-bullet and you've got your batter! Simply heat up a small pan on low heat, spray a little bit of oil to avoid sticking, and bake your pancakes one at a time, flipping once the bubbles disappear and the color is equal straight to the middle.

For the topping: chop up 1 green apple into small cubes, place in a small pot or pan and add 1 tbsp maple syrup, and 1/4 tsp cinnamon. Stir until the apples are cooked, and add on top of the pancake stack!
