Spinach & mushroom egg cups

Muffin compares to these eggstraordinary bite-size breakfast cups of goodness!

Egg cups

These are extremely yummy and easy to prepare, and include no carbs whatsoever! They take approximately 5 minutes to prepare, and 15 minutes to bake in the oven.


Here's the recipe of these carb-free egg cups:


(for 2 people)


You will need:


- 3 organic eggs

- 2 handfuls of spinach (spinach gets really small when cooked)

- 4-6 mushrooms

- about 2 tbsp olive oil

- 1 muffin tin

- Salt and pepper


Steps:


1. Brush the cavities of the muffin tin with sprinkles of oil (I chose olive oil) and preheat the oven to 180 degrees Celsius.


2. Wash the spinach and mushrooms and chop the mushrooms only. Cook on low heat with a little bit of oil in a pan on the oven top- starting with the mushrooms first (for about 5 minutes) then add the spinach (cook for about 1 minute only).


3. In a small bowl, whisk together the 3 eggs (you may choose to include only egg whites, if that's the case, then add 2 more egg whites)


4. Add the ingredients in step 2 to step 3, sprinkle salt and pepper and mix together. Pour the mixture in the muffin cavities and bake for 15 minutes or until egg cups rise and are cooked down the middle (you can check by inserting a toothpick inside.


5. Serve right away, else the egg cups will deflate.
