Savory mini toasts

Hummus say, these savory minis are not just pretty toasts - they are quite drool-worthy too!

Hummus toasts

To make this extra healthy, I used rye crackers as the base instead of toast (that also makes sure you get the right amount of fiber in your morning diet as well)! They are topped off with regular hummus, beetroot hummus and guacamole.

To make the hummus (regular and beetroot):

- 1 can of hummus, washed and drained well

- 1/2 lemon (add more/ less as you like)

- 1/2 tsp salt (add more/ less as you like)

- 1 tbsp tahini

Simply blend together, take half away and place in a bowl then add a few beetroot slices (4 or 5 should suffice) and add to the remaining hummus and blend.

For the topping, add thin cucumber slices to the regular hummus, and some pretty parsley leaves on the beetroot hummus.

For the guacamole:

- 1/2 avocado

- 1/2 lemon

- crushed salt and pepper

- 2 tbsp olive oil

- Cilantro (few stems, washed and chopped)

- For the topping: 6 cherry tomatoes

Note: skip the onion if having this in the morning ;)

Simply blend together and add the chopped cherry tomatoes on top!
