Classic fattoush with a twist

This is the typical salad on everyone's iftar table - and in any Lebanese restaurant all over the world. You can't go wrong with this salad - it's a safe choice that everyone either loves (or doesn't seem to mind). I personally love it because it's full of flavor and crunch, and that dressing simply cannot be matched! Usually, you would add fried bread to this salad (and that's probably why most people love it) but of course, fried bread is full of fat and has zero nutrition! So instead, I've replaced the fried bread with some yummy nutritious GF quinoa -and that's the twist ;)!

Fattoush salad

To prepare this salad (for two):


Wash and chop into chunks:

- 6 big romaine lettuce stems

- 2-3 cucumbers

- 1 large plump tomato

- 1/4 red onion

- 2 radishes


Garnish with:

- Handful of pomegranate seeds

- Few mint leaves

- Few parsley leaves

- Previously cooked quinoa (see this post for details on how to best cook your quinoa)


For the dressing:

- 2-3 tbsp pomegranate molasses

- 1/2 lemon

- 2 tbsp olive oil

- Sprinkle of crushed salt and pepper to taste


Mix all together and enjoy!
