Guilt-free mini atayef

In case you haven't heard of atayef before, here's the brief. Atayef are an Arabic dessert that are usually served only during the month of Ramadan. They are basically mini pancakes that are extremely soft and fluffy and are usually filled with either nuts and spices, or cheese, then deep fried and dipped in 'atter' which is pretty much a melted sugar sweetener. So, it's not really a 'sunnysideday' kind of dish if you know what I mean... Here's a twist on the traditional Arabic atayef- a healthier, yummier and more refreshing version.

I filled these mini atayef (or 'atayef asafeer') with vanilla chia pudding. For the recipe, refer to this post. Once you prepare your chia pudding, let it sit in the fridge for an 1 hour or 2 before filling your atayef. Add only 1 tsp in each.

Then you simply close them halfway:

Then add your favorite berries - I chose raspberries!

Place in the fridge for about an hour and serve cold.

These delicious goodies are so easy to prepare and look like mini pretty rose bouquets. They are healthy and are the right amount of sweetness - minus the sugar added into the atayef - which is ok to have every once in a while and treat yourself! ;)
