Birthday banana pancakes

I absolutely love celebrating birthdays and I'm not ashamed of admitting that I am one of those people that makes the hugest deal about a close person's birthday (husband, best friend, family). Celebrating a close person's birthday starts a week before the actual day, and lasts for another week afterwards - sometimes it can even go up to a month (how else would you really celebrate??)! If it was up to me, I would change the word to birthmonth -might as well! If you're like that too, and even if not, this stack of healthy pancakes is perfect to make that someone feel special on their day. It's easy to prepare into a pretty stack (that hopefully does not fall apart!) - check it out!

Birthday pancakes

All you need is (for 8-10 pancakes):

- 1 cup oats

- 2 ripe bananas

- 1/4 tsp cinnamon

- 1 tsp vanilla

- 1 cup almond milk

Blend it altogether and bake it on a pan flipping each side once the edges are fully cooked through (note: this pancake recipe takes a little bit longer than my previous since it has more bananas compared to oats, and they need a longer time to bake through). Ideally you would have it on each side for about 2 minutes on low heat.

In the meantime, wash and chop your fruits to create the stack. I used blueberries, strawberries and bananas. Chop your fruits quite thin so that the stack can hold together (also chop you blueberries in half because the rounded edges will make it easy for your stack to fall).
