Vanilla chia pudding & berries

Love having this pudding for breakfast and even for a guilt-free dessert when I'm craving something refreshing!

Chia pudding and berries

To prepare the chia pudding:


For two servings:


- 1/2 cup chia seeds

- 2 cups of almond and coconut milk mix (I prefer using this type of milk, I find using 2 cups of coconut milk too heavy)

- 1 tsp vanilla extract

- 1 tbsp agave syrup (you can also use maple syrup or honey)


Mix in a bowl together and leave in the fridge for about 30 minutes, then mix together again, and separate into two small serving cups and leave in the fridge overnight.


To top this off and make this extra tropical - top up with sliced bananas, strawberries, raspberries, blueberries and almond slices. Hint: you can make them stick together and not fall apart by using your preferred nut butter (I used peanut butter with this, almond butter would also go very nicely)!
