Blackberry & pecan forest salad

YUM! This salad is so perfectly balanced - crunchy kale - sour blackberries - sweet candied pecans - refreshing yellow bell pepper - all tossed with a simple lemon olive oil dressing.

Nothing tricky about this salad. Simply wash and chop your kale and yellow bell peppers, and add some washed blackberries on top. To finish off, add some candied pecans by first heating 1tsp of coconut oil in a small pan and 1 tsp of brown sugar. Add your pecans in (about 10-12 pieces) and toss around on low heat until the brown sugar and coconut oil mix well together and stick on the pecans. Top off your salad and toss with a simple lemon olive oil dressing - you're good to go!
