Skinny lemon chia muffins

Lemon poppy seed muffins have always been a childhood favorite. This is a twist on the recipe using chia seeds instead of poppy seeds, and no dairy or egg and 100% vegan. They were super refreshing and perfect for the summer, and a great match with a hot cup of coffee in the morning as well. Check it out!

To make these delicious skinny lemon chia seed muffins:

You will need:

- 1 cup rolled oats (can blend your oats in the blender to make oat flour) - 1/2 cup whole wheat flour - 2.5 teaspoon baking powder - 2 tablespoons chia seeds - 1/4 cup agave syrup (can replace with honey) - 1/4 cup lemon juice + 2 teaspoons lemon zest - 1/4 teaspoon salt - 2 overripe mashed bananas (can replace with 2 eggs) - 2 tablespoons of coconut oil - 1/2 cup almond coconut milk blend (or milk of choice)

Directions 1- Preheat oven to 180 degrees C. Lightly grease a muffin tin with coconut oil or line with muffin cups and set aside. 2- Place the oats, flour, baking powder, chia seeds and salt into a large bowl and mix well. 3- In a separate bowl pour the agave, lemon juice, mashed bananas, coconut oil and almond coconut milk into a bowl. Once mixed, add the wet ingredients to the dry ingredients and stir well. 4- Pour the batter into the muffin tin until each tin is about 3/4 of the way full. 5- Bake for 20-23 minutes or until a tooth pick comes out clean. Cool down for about 10 minutes and then top off (optional)!)

To top off:

Vegan option: 1/3 cup powdered brown sugar, 3 tbsp almond milk, 1/4 tsp vanilla extract (simply combine over low heat and pour over baked muffins)

Non-vegan option: 2 tbsp non-fat greek plain yoghurt,1 tbsp agave syrup (simply mix together in a bowl and top over baked muffins using a tablespoon)
