Cherry cake bars (vegan)

Wow, these cake bars are all that, plus a cherry on top! You would never believe that these cherry cake bars are healthy (sugar-free and vegan too)! They are super soft and fluffy, melt-in-your-mouth and make your entire home smell like cherry-vanilla candles as they bake, what more can we possibly ask for in a cake??

This a super easy and hassle-free recipe, check it out!

You will need:

- 2 cups organic wholewheat flour

- 1/2 cup ground almonds

- 1/2 cup agave syrup

- 1 tsp. baking powder

- 1/4 cup liquid coconut oil

- 1 cup almond coconut milk

- 2 tsp vanilla extract

- 1 cup fresh cherries, deseeded and chopped in halves/ quarters


1- Preheat the oven to 180c. Note: to make these cake bars I used a nonstick mini-cakes mold, but if you don't have one you can simply use any square cake mold and make a bigger cake instead. Lightly brush with coconut oil.

2- Mix together the dry ingredients (flour, ground almonds and baking powder) in a mixing bowl. Note: if you don't have ground almonds, you can simply use a blender to blend 1/2 a cup of almonds.

3- Pour the wet ingredients (agave syrup, coconut oil, almond coconut milk and vanilla extract) into a separate bowl and stir well.

4- Gradually add the wet ingredients to the dry bowl and mix.

5- Stir in the cherries.

6- Pour into the brushed tin and bake for 40/45 minutes, until the a toothpick comes out clean

7- Allow to cool before serving, enjoy!
