Creamy avocado zoodles

YUM! This is by far at the yummiest lunch! You're looking at zoodles, or in other words, "zucchini noodles". These are super easy to make, require a few ingredients, and take less than 30 minutes to prepare! Check it out:

You will need:


- 1 large zucchini

- 1 can of organic chickpeas (ready to eat)

- 1/2 avocado

- 1/2 lemon

- 2 cloves garlic

- 1 spring onion

- Salt

- Pepper

- Paprika

- Olive oil

- Spriral grater


Steps:


1- Preheat oven to 180 C. Wash your chickpeas, place in an oven tray, season with paprika, and let them roast for about 10 minutes.


2- In the meantime, wash your zucchini and peel it and then 'zoodle' it up with the spiral grater.


3- Chop your spring onion, you will need the top "white" half to sauté and the bottom half to top off your dish.


4- Prepare your creamy avocado sauce: in your nutribullet or blender, add 2 cloves of garlic, 1/2 lemon juiced, 1/2 avocado, a little bit of olive oil (1 tsp is enough), some salt and pepper. Blend and set aside.


5- In a pan, add a little bit of olive oil (1 tsp should be enough), add half the previously chopped spring onion, then add your zoodles and stir for approximately 3-4 minutes on low-medium heat (don't leave in for too long otherwise they will be overcooked). Then add the creamy avocado dressing and stir for another 1. Once cooked, pour into your serving plate.


6- Your chickpeas should be ready by now. Top off your dish with the chickpeas and the remainder of the spring onion and voila!


Easy - as - noodles!
