Avocado baked eggs

A simple life philosophy: a little bit of everything and not a whole lot of anything. It's amazing how simplifying everything in life can make it a whole lot easier and more enjoyable!


This is what this breakfast is all about. It's the perfect balance, you've got your protein (eggs), healthy fats (avocado), vitamins and fibre from the spinach and tomato, good amount of carbs from wholemeal toast, and antioxidants from the berry smoothie.

To make this breakfast, you will need to pre-heat the oven to 180 degrees C, then chop your avocado and scoop out a little bit of it to make space for the eggs. Pour 1 egg in each half and bake for about 15-20 minutes for a well-done outcome.


For the berry smoothie, (for two) simply blend your favorite berries with 1.5 cup of almond milk, 1 tbsp oats, and 1 tbsp flax seeds. To make a thicker smoothie, use frozen berries, and if that's not available, then add a little bit more oats!
