Lentil rainbow salad

A lunch that keeps you as light as a feather yet as full as the cup that's half full - is my kinda lunch!

This salad is the perfect combination of pretty colors and yummy flavors. It is super simple and literally takes 10 minutes to put together!

Lentil rainbow salad

To make this salad, all you need is:

- 1/2 cup green lentils

- 1 cup chopped baby spinach

- 1/2 yellow bell pepper

- 1/2 orange bell pepper

- 1/4 cup pomegranate seeds

- 1 medium sized tomato

- 1/2 lemon, squeezed

- pinch of salt and pepper

- 2-3 tbsp olive oil

To make the lentils, simply cook them like rice. Add a little bit of cooking oil in a pot on low heat, then add your lentils, dress with 1/2 tsp of salt, and cover with boiling water. Cover the pot and let it simmer for 20 minutes and your lentils should be cooked.

Simply chop the vegetables finely then dress them up with olive oil, lemon juice, salt and pepper, and you're set with a delicious - quick - healthy and balanced lunch!
