Sweet potato toast

Sweet potato is life! Enough said!


These sweet potato toasts are the best thing since sliced bread - seriously - ditch your toast bread and give this a shot!

Sweet potato toasts

For 6 pieces, all you need is:


- 1 medium sized sweet potato

- Toppings: few slices of cucumber and tomato, rocca leaves, blueberries, strawberries, few slices of banana

- Base: organic natural peanut butter and avocado


Directions:


1- Pre-heat oven to 180 degrees C.


2- Chop your sweet potato into thick slices. First cut it in half, then cut each half in 3 vertical parts (thickness must be 1cm or a little more)


3- Brush with olive oil and don't season (must keep the taste versatile for sweet or savory toppings). Bake in the oven for 20 minutes then broil for about 5 minutes


4- Top them off with your favorite toppings! For the sweet ones, I chose peanut butter as a base for banana, blueberries and strawberries. For the savory ones I chose avocado as a base for cucumber, tomato and rocca leaves.


Note: sharing is recommended (yet highly unlikely)!
