Muesli in a pineapple

Bowls are overrated, it's all about pineapple boats (plus - who likes to wash dishes anyway??)!


These pineapple boats are stuffed with muesli soaked in almond milk and fresh pineapple juice overnight then topped off with a swirl of homemade raspberry puree - what a refreshing delight to wake up to!

Pineapple muesli

To make these yummy bowls, you'll need:


- 1 baby pineapple, cut in half and flesh scooped out

- 1 slice pineapple blended to make 1/4 cup pineapple juice

- 1 cup almond milk

- 3/4 cup muesli (I used Mix & Muesli - energy booster gluten free kind)

- 1/2 cup raspberry, blended with 1 tsp organic maple syrup


Steps:


1- Simply mix your muesli with the almond milk and pineapple juice in a separate bowl, then scoop it into the pineapple boats and leave it overnight in the fridge


2- Top up with the raspberry puree in the morning and enjoy!


This is one of those deceiving breakfasts that make it look like you've put in a lot of effort in the morning, but really, you did nothing but wake up and find them in the fridge ;)!
