Not your classic chia

Chia pudding has got to be one of my favorite breakfasts to prep in advance!

This is not your classic chia seed pudding. You're looking at roasted almond and PB chia and oats pudding topped with a dollop of refreshing and tangy raspberry nicecream. SO GOOD -and just like the rest of my recipes which sound a lot more complicated than they really are- it is super easy to prepare!

Chia raspberry nicecream

To prepare this, you'll need:

- 2.5 tbsp chia seeds

- 1/4 cup oats mixed with 1 tsp organic peanut butter

- 1 cup roasted almond milk (the brand is Alpro)

- 1 tbsp organic maple syrup (can replace with honey or agave)

- 1 tsp vanilla extract

For the topping:

- 1/4 frozen banana

- handful of frozen raspberries


1- Simply mix the pudding ingredients together in a bowl and place them in the fridge

2- Check on it after 30 minutes to 1 hour, and stir (the seeds and oats might sink to the bottom). Cover and let it sit overnight

3- Your chia and oats pudding should be ready in the morning! Simply blend the topping ingredients in a strong blender, add a little bit of almond milk to just get the blender to move (be sure to not add too much otherwise your nice cream will be too liquid)

Enjoy as a refreshing breakfast or a tasty and healthy dessert!
