Orange nectarine healthy cake

Orange cake has always been one of my favorite cakes as a child and until today! So engineering a perfect orange cake recipe that is healthy, sugar-free, dairy-free and made with whole-wheat flour yet still tastes AMAZING was a dream come true! This orange cake is topped off with nectarine slices because it's also one of my favorite fruits and the two go so well together - also, it's my birthday so I get to spoil myself and put all my favorite things together ;) - ps - can I have ice-cream with that?

This cake is so easy to bake and you most likely already have all the ingredients available! Check it out:

All you need is:

Dry ingredients

- 2 cups whole wheat flour

- 1 and 1/2 tsp baking powder

- 1/2 tsp baking soda

- 1/2 tsp salt

- 1 and 1/2 tbsp orange zest (wash the orange very well and use a shredder to peel zest off)

Wet ingredients

- 1 tbsp melted coconut oil

- 2 egg whites (note: egg whites are optional. If you choose to skip it, replace with an extra tsp of baking powder)

- 2 tsp vanilla extract

- 1/4 cup agave syrup (you may use honey or maple syrup instead)

- 1/4 cup choice of plain yogurt (I used coconut yogurt but you may opt for greek yogurt or soy yogurt - as long as it is plain)

- 1/4 cup fresh orange juice

- 1/4 cup almond milk (or any choice of milk can work)


- 2 nectarines, washed and sliced thinly


1- Preheat oven to 180 degrees C and use a nonstick pan with a removable bottom. If using any other kind of pan, then spray with cooking spray.

2- In a bowl, mix all dry ingredients together. In a separate bowl, mix all wet ingredients together leaving out the milk. Then add the wet ingredients to the dry and stir, gradually adding the milk in doses until the batter is fully combined with no lumps.

3- Pour the batter in your cake pan and decorate with nectarine slices, pressing them in gently (as shown in the picture below).

4- Bake in the oven for 35-40 minutes or until toothpick comes out clean.

Once baked, let it cool down and serve. To store, place in an airtight container and keep it in the fridge for 5 days and heat each piece before you have one! SO GOOD!
