Salted caramel almond butter chocolate cups

I think we can all agree that life became better when salted caramel came to be. Why hasn't anyone thought of this earlier? How were our ancestors living before sea salt and caramel, or sea salt and dark chocolate ever became a thing?? It boggles my mind!

Disclaimer: this post comes with a warning that these salted caramel almond butter dark chocolate cups are super addictive! They are a chocolatey, crunchy, melt-in-your-mouth, leave-your-body-for-a-few-moments-as-you-chew experience - it is unreal!

Good news is, for all the lazy chocolate lovers out there who ain't got time to bake (I can say that because I'm one of you too!) - these babies don't take long to make whatsoever - 20 minutes tops and all you need to do is freeze them for an hour and all your salted caramel chocolate dreams will become a reality!

Salted caramel almond butter cups

What you need:

- 400 grams of semi-sweet dark chocolate chips

- 1 cup of pitted dates

- Sea salt

- Handful of sugar-free Cheerios

- Organic almond butter

- 2 tsp coconut oil


1- Line a muffin tin with liners

2- Melt your chocolate chips on oven top by boiling water in a pot and then placing the chocolate chips in a plate on top of the pot. Add 2 tsp of coconut oil and stir until fully melted

3- In the meantime prepare your date paste (or "caramel sauce") by pouring hot water on the pitted dates and letting them soak for 10 minutes. Once ready, blend your dates and add 1 tbsp of hot water (which they were soaked in) at a time. Be sure not to add too much to avoid the date paste becoming too liquid

4- Prepare your cups as follows: 1 tsp melted dark chocolate, 1 tsp date paste, sprinkle of sea salt, little bit of sugar-free Cheerios for crunch, then dark chocolate again and almond butter. Use a fork to create a marble look with the dark chocolate and almond butter then sprinkle with sea salt to finish off.

5- Place in the fridge for 1 hour and enjoy!

To store these, you can either keep them in the freezer for 2 or 3 weeks or in the fridge for 7 days!
