These avocado power bowls are the easiest and fastest thing to put together! You can have 1 half as a snack or as a light lunch before an afternoon workout.


There are tons of options available as a filling. I chose to fill one half with chickpeas, roasted beetroot, red onion and parsley, and another half with quinoa mixed with chopped cucumbers, tomatoes and spring onion.


Go ahead and get creative!
