Walnut crusted french toast

Crunchy, cinammony, soft on the inside, melt in your mouth, blueberry bursting, oven baked walnut crusted french toast DELICIOUSNESS! Yes, I'll have 2 orders, each for me!


You won't believe this french toast recipe is butter, oil, sugar, and dairy free! Seriously drool-worthy stuff! The best part is, it'll take you less than 10 minutes to prepare!

Walnut crusted french toast

To make this yumminess, you will need:


- 3 pieces of wholemeal toasts, chopped in half to make 6 triangles

- 2 organic eggs

- 2 tbsp organic maple syrup

- 1 tsp vanilla extract

- 1/4 tsp cinnamon

- 1/4 cup almond milk

- Handful of walnuts, crushed


Topping:


- Handful of blueberries

- 1 tbsp maple syrup


Directions:


1- Preheat your oven to 180 C and prepare a tray with parchment paper


2- In a bowl, whisk the eggs, maple syrup, vanilla extract, cinnamon and almond milk together. In a separate bowl, crush a handful of walnuts using your hands (not a blender so you don't end up with a powder).


3- Dip each piece of bread in the egg mix, then in the crushed walnuts, making sure each side is fully coated. Place each dipped piece on the lined tray.


4- Bake in the oven for 10 minutes, checking on it every once in a while, and flipping as necessary, to make sure each side turns golden.


5- In the meantime, prepare your blueberry maple glaze by heating 1 tbsp of maple syrup on low heat in a pot, then adding the blueberries in and stirring until glaze forms (note, you do not want the blueberries to fully burst so they remain juicy).


6- Top off your French toast with the glaze and serve immediately!
