Turmeric & dates pancakes

I get it now - the turmeric craze is there for a reason! These fluffy turmeric and dates pancakes topped with figs and toasted nuts will make your day absolutely golden!

I don't think I'll be going back to classic pancakes anytime soon after I've tried this stack that has dates, spice and everything nice! If you're here for the delicious gluten-free, dairy-free, super clean and vegan recipe, scroll down to keep on reading!

Turmeric dates pancakes

To make a stack of 10-12 pancakes, you will need:


Pancake batter:


- 2 cups of gluten-free rolled oats

- 1 1/4 cups almond milk

- 1 tbsp date paste (soak 5-6 dates in hot water for 10 minutes, remove the seeds and blend to make paste, use only 1 tbsp)

- 1/4 tsp cinnamon

- 1/2 tsp turmeric

Toppings:

- 6 to 8 walnuts, crushed

- Handful of almond slices, toasted

- 2 figs, washed and sliced in quarters

Directions:

1- Blend the pancake batter ingredients together and brush a pan with a little bit of oil then place on low heat.

2- Using an ice-cream scooper or a tablespoon, pour some batter on the heated pan to make each pancake and flip once you start to see bubbles forming, or once the edges become a darker color.

3- Stack your pancakes and top off with the toasted almond slices, crushed walnuts, and figs.

You won't need any syrup as the dates already make the pancakes perfectly sweet!
