Turmeric quinoa detox green salad

Let's stop whatever we're doing and focus on this beautiful turmeric quinoa detox green salad that will make you feel amazing inside and out. This salad won't judge you for having a burger and fries last night or for that chocolate bar you snuck in just before going to bed. Yes it's that perfect!

Turmeric quinoa detox green salad

The craze about turmeric is there for a reason! Turmeric has a natural anti-inflammatory compound called curcumin, which is also fat soluble, so it's a great idea to pair it with fatty foods such as avocado. The key to including this spice in your meal though is that you need to add pepper - adding pepper with turmeric increases your body's ability to absorb the good effects which turmeric has!

Alright back to the fun stuff, to make this incredibly fast, delicious and fulfilling salad, you will need:

- 3/4 cup white quinoa

- 3/4 cup baby spinach

- 1/2 cup rocket leaves

- 1/2 avocado

- 4 radishes

- 1 cucumber

- Spring onion

- Parsley


Dressing and spices needed:


- 1 lemon, squeezed

- Balsamic vinegar

- Salt

- Pepper

- Sumac

- Turmeric


Directions:


1- Cook the quinoa exactly like you would cook rice. Add a little bit of cooking oil in a pot to heat up, then add the washed quinoa with 1/2 tsp of salt and 1/4 tsp turmeric, and a pinch of pepper. Cover with water and let it simmer on low heat for 20 minutes.


- Wash your veggies, chop the radishes, avocado, spring onion and cucumber and place them on top of your baby spinach and rocket leaves mix. Top up with parsley.


3- Once the quinoa is ready, let it cool down then add some to your salad. Note that quinoa expands when cooked so you may not want to include the entire pot.


4- Dress your salad with lemon juice, balsamic vinegar, salt, pepper and sumac.
