Thai noodle vegan salad

When Spice Girls released Spice Up Your Life back in 1997, I'm pretty sure they were referring to this salad all along. They could see 20 years into the future! (On a separate note, how has 20 years passed already?!)


Anyway, this salad will surely make you feel like you are Livin' La Vida Loca! And yes, my salad game may be strong but I do need to update my taste in music!

Ok now let's get serious for a second, this salad is oh-so-satisfying and bursting with flavors! The textures are absolutely perfect together and sooner than you know it, you will be done with the bowl and asking for more!


Thai noodle salad

To make this super satisfying and flavorful salad, you will need (for one):


- 1 cup of baby spinach

- Bunch of Thai rice noodles (enough for one person, about 4 fork swirls)

- 1/4 cup purple cabbage, chopped thin

- 1 cucumber, chopped in thin strips

- 5 cherry tomatoes, chopped in quarters

- 1/4 red pepper, chopped in thin strips

- 3 radishes, chopped thin

- 2 spring onions, chopped

- 1/4 carrot, shredded

- Fresh cilantro


Dressing:


- 1 tbsp peanut butter

- 1 tsp soy sauce

- 1 tsp maple syrup

- Chili flakes to taste

- 2 cloves garlic, crushed

- 1/2 lime, squeezed


Directions:


1- Cook your Thai rice noodles by boiling a pot of water, then adding a bunch and covering the pot for 5-8 minutes.


2- Wash and chop all veggies then add as follows: spinach, 4 fork swirls of cooked Thai rice noodles, purple cabbage, red peppers, cucumbers, cherry tomatoes, radish, spring onion, shredded carrots and cilantro.


3- Mix dressing ingredients together and drizzle on your salad.


Crunch away!
