Healthy pumpkin spice bread (GF + DF)

I was pleasantly surprised by a lot of things in my life but this one definitely tops them all. This pumpkin spice bread recipe is everything you'd ever need in a healthy snack, breakfast, or even dessert! My honest non-biased rating: 10/10!


Texture: soft

Taste: perfectly spiced up and just sweet enough

Crunch: just the right amount of pumpkin seeds

Aftermath: you feel light, and perfectly fulfilled, and not bloated at all since they are flourless


This recipe is a must try! It is gluten-free, dairy-free, sugar-free, and butter and oil-free. And also - EXTREMELY DELICIOUS!

Pumpkin spice bread

To make this delicious pumpkin spice bread, you will need:


Wet ingredients:


- 1 cup of homemade pumpkin puree (about 1/2 a medium sized pumpkin, roasted in the oven for an hour, then blended into a puree)

- 4 eggs, room temperature

- 1 tsp vanilla extract

- 1/4 cup coconut butter, melted


Dry ingredients:


- 1/2 cup coconut flour

- 1 tsp baking soda

- 1/2 tsp ground cinnamon

- less than 1/4 tsp ground cardamom

- less than 1/4 tsp cloves

- 1/4 tsp salt

- 1/4 cup toasted pumpkin seeds + 1 tbsp for topping


Steps:


1- Pre-heat oven to 200 degrees C


2- Mix the wet ingredients together in a bowl, and the dry ingredients in a separate bowl. Then combine both together and mix until well combined.


3- Use a non-stick square tin to pour the batter in, then top off with more toasted pumpkin seeds.


4- Bake in the oven for 20-25 minutes or until toothpick comes out clean.


5- Let it cool down for 15 minutes and enjoy!


To store, place in an airtight container in the fridge for 3-4 days (if it can even last that long)!
