Green goodness brunch bowl

I've learned to come to terms with the fact that I am NOT a night owl.

I am a morning person, and damn proud of it too!

But sometimes, I get the occasional 'come on barbie let's go party' bug. What? Why are you looking at me this way? Is this not a song you kids still like to dance to these days?

So when this happens, and I miss my 6:00am alarm clock and end up waking up slightly later instead - (I won't tell you the time, let's just stay that in a regular person's books, it is still quite early) - I like to treat myself to an epic brunch bowl that crosses off both my breakfast and lunch needs.

What this includes:

- 1 cucumber, chopped and salted

- 1/2 avocado, dressed in lemon and salt

- 1/2 cup mushrooms, sautéed with cherry tomatoes and spinach

- 2 organic free range eggs, soft scrambled on low heat

- 2 wholemeal toasts

Epic meal after an epic workout if you ask me!
