Veggie freak bowl

The masses have spoken and the results are in, by the powers vested in me I shall now proclaim this bowl as the Veggie Freak Bowl!

So if you weren't around for the Instagram poll I posted a few days ago on my stories about what to name this bowl, it was a close one between the Green Rainbow Bowl (44%) and the Veggie Freak Bowl (66%). At first I thought, awesome, this is the name I prefer. But now I'm like, who you callin' a veggie freak, punk?

All jokes aside though, I know this isn't a Trump Vs. Hilary scenario, but I do take your votes quite seriously, so thank you for your genuine thoughts!

Veggie freak bowl

Here's the deal with this bowl...

You will need (for 1 bowl):

- 1 cup spinach

- 1/2 cup kale

- 1/2 zucchini, chopped, spiced and roasted in the oven

- 1/2 carrot, chopped, spiced and roasted in the oven

- 1/2 cup small white mushrooms, chopped, spiced and roasted in the oven

- 4 tbsp cumin roasted chickpeas

- 1/2 tomato, cut into wedges

- 1/4 avocado

- 1/2 lemon

- Salt

- Pepper

- Fresh cilantro


1- Preheat oven to 180 degrees C.

2- Chop your carrots, zucchini and mushrooms, brush them with a little bit of olive oil, dress with sea salt, crushed pepper, and seasoning of choice. Roast in the oven for 15-20 minutes. Note: you may need to leave your carrots in for a little longer (5 extra minutes).

3- Wash your organic chickpeas and dress them with cumin, roast in the oven for 10 minutes.

4- In the meantime, wash your spinach and kale and dress them with 2 tbsp of olive oil and a squeeze of lemon (to massage the kale). Chop your tomatoes.

5- Prep your dressing: blend 1/4 avocado with 1/2 squeezed lemon and a few fresh cilantro leaves, add salt and pepper to taste, add water gradually to thin down the dressing.

6- When the veggies are ready, prep your bowl as follows: spinach and kale at the bottom, zucchini, carrots, mushrooms, chickpeas and tomatoes on top. Drizzle your avocado lemon dressing and voila!

Super easy, quick, full of all the veggies you need and delicious! They don't call me veggie freak for nothin ;)!
