10-minute veggie tacos

I would take veggie tacos over any other type any day! You can get so creative with the different veggies and end up with a super fulfilling meal!

These veggie tacos are the best thing to make when you are having a super busy day but still want to have a lunch that hits the spot.

These hard shell tacos are crisp, bursting with flavor, saucy, zesty, and simply delicious!

10 minute veggie tacos

To make these, all you need is:

- 10 hard shell tacos

- 1 can organic kidney beans

- 2 cloves garlic

- 1/2 lime

- olive oil

- salt and pepper

- Butter lettuce, washed and chopped thin

- 8 cherry tomatoes, washed and chopped in quarters

- 1/2 corn, boiled then grilled (canned corn works too)

- 1/2 small red onion, chopped small

- Cilantro leaves

- 1/2 avocado, chopped in strips

- Ready taco sauce (or you can make your own following step 3 here)


1- If you are using real corn (as opposed to canned corn) place it in water in a pot and bring to boil.

2- In the meantime, wash your organic canned kidney beans and dress them in 1/2 lime (squeezed), 2 cloves garlic (crushed), 2 tbsp olive oil and salt and pepper.

3- Wash and chop your cherry tomatoes, butter lettuce, red onion, cilantro leaves, and avocado, set aside. Once the corn is ready, slide a knife down the cob to get the corn out.

4- Prepare your tacos as follows: lettuce, marinated kidney beans, cherry tomatoes, corn, avocado, red onion, and cilantro. Finally, add your taco sauce and serve!

I promise you these tacos will be done even faster than these 4 easy steps!
