Almond protein porridge cups

When the weather cools down and the sweaters come out, it only makes sense to wake up to a warm comforting bowl of perfectly slow-cooked oatmeal.

These porridge cups are so tasty! I personally couldn't tell which I preferred more - the maple-glazed blueberry, or the banana-cinnamon.

This breakfast is definitely one of my favorites during the cooler months, it's full of fiber and protein, and low in calories. I could have this at least twice a week!

Porridge cups

To make the perfectly cooked porridge (for two):

You will need:

- 3/4 cup organic rolled oats

- 1 cup almond milk

- 1/2 cup water

- 1 tbsp organic almond protein (optional, other protein types can be used)

- 1 tbsp maple syrup

For the topping:

- 1/2 cup blueberries

- 1 tbsp maple syrup


- 1/2 banana, chopped

- Cinnamon


1- Pour your oats in a pot and stir on low heat, then add the almond milk and water, mix very well and gradually add your almond protein in, keep stirring on low heat. Add your maple syrup in and keep stirring until desired thickness is reached. To make the process faster, you may increase the heat, but note that this could dry your oats - so the lower the heat, the slower the process, but the better the outcome!

2- Pour your oatmeal in a bowl, or in two bowls if sharing.

3- Topping: to make the blueberry glaze, simply heat 1 tbsp of maple syrup in a pan on low heat and add the blueberries in, keep stirring until glaze starts to form. If going for banana-cinammon, simply chop your banana into slices and sprinkle cinnamon on top.

Perfect to cozy up to with a warm cup of coffee!
