Hard-boiled eggs on avocado toasts

We eat with our eyes first. Often this can be quite dangerous as it leads to eating things you're not really hungry for and simply overeating.

But sometimes it can be the exact opposite and lead to positive effects, like enjoying your incredibly satisfying and healthy breakfast even more than you would have if it hadn't looked this pretty!

Hard boiled eggs on avocado

To make this breakfast for one, limit to 1 piece of wholemeal toast with 1/4 smashed avocado, and 1 hard-boiled egg. To make a hard-boiled egg that's soft on the inside, let the water come to a boil then switch the heat off and leave the egg in for a further 6 minutes until it hardens.

The smoothie is an alternating pear and pomegranate smoothie topped with pomegranate seeds and crushed walnuts. To make the smoothie for one, blend 1/2 a frozen banana with 1/2 cup of pomegranate seeds, 1tbsp oats, and 1/4 cup almond milk. Set aside then blend 1/2 a frozen banana with 1 pear, 1 tbsp oats and 1/4 cup almond milk. Pour the smoothie in a glass alternating between pear and pomegranate. Top off with pomegranate seeds and some crushed walnuts.

This breakfast is perfectly balanced and will leave you feeling energized and ready for the day ahead!
