Salted caramel candy apple donuts

We've all been there when we were kids, asking our parents to buy us a candy apple because it's a fruit at the end of the day - and a piece of fruit coated in sugar and food coloring is 'not as bad' compared to other candies. Yes we've all been there when we ended up eating the coated candy crust and throwing out the actual apple. Like 2 weeks ago.. I mean, when we were kids... right?

I'm not sure if it was my extremely random toffee candy apple craving or the fall flavors that inspired me to create these donuts. Either case, here's a wholesome healthy homemade recipe for salted caramel candy apple donuts if you're going through a similar craving!

Ps. these are gluten and dairy free too, and can be vegan if you replace the egg with a flax egg!

What you need:

Dry ingredients:

- 3/4 cup rolled oats, blended to make oat flour

- 2 tbsp almond protein (if not available, you can skip it)

- 2 heaping tbsp coconut flour

- 1/2 tsp baking powder

- 1/4 tsp baking soda

- 1 tsp cinnamon

Wet ingredients:

- 4 tbsp organic apple cider

- 1 egg (room temperature)

- 1/2 cup almond milk (or milk of choice)

- 2 tbsp melted coconut oil

- 2 tsp vanilla extract

- 1/4 cup maple syrup or honey (or sweetener of choice)

- 10-12 dates, soaked in hot water for 10 minutes

- 2 tbsp almond milk

- 1/2 tsp vanilla extract

- Sea salt

1- Pre-heat oven to 180 degrees C. and lightly brush your donut try with coconut oil.

2- Mix all dry ingredients together in a bowl. Mix wet ingredients in a separate bowl and blend very well until well combined. Add the wet ingredients to the dry ingredients and mix until well incorporated (you may need to use your hands for this).

3- If you have a piping bag, use it to pour the batter in the donut tray holes. Otherwise, you can use a teaspoon and carefully fill each hole with batter cover 3/4 to the top.

4- Bake in the oven for 16-18 minutes.

5- In the meantime, blend your soaked dates together with the almond milk and vanilla extract. You may need to add some water for a smoother texture - use the same water which the dates were soaked in.

6- When your donuts are ready, let them cool down in the tray for 5 minutes, then take them out and let them cool down for another 5 minutes before topping them up.

7- Use a teaspoon to top off your donuts with your caramel sauce. Sprinkle sea salt on top and your donuts are ready to go!

These donuts are perfect with a morning cup of coffee or an afternoon tea and dessert. If you try them, be sure to tag me on Instagram!
