Banana walnut superfood bread

When bananas meet walnuts, magical things happen. Mix this equation with some chia and flax seeds, a sprinkle of cinnamon and a hint of maple and your life is complete with superfoods!

These banana bread bars are soft, nutty, cinammony, full of flavor, fulfilling and extremely healthy - not to mention super satisfying! When that banana bread craving kicks in, these babies are your answer!

These are vegan too and are a perfect breakfast to have with a cup of coffee, or an afternoon pick me up with a cup of tea.

Banana walnut superfood bread

Here's what you need to make 10 bars (or one loaf depending on which tin you choose to use):

Wet ingredients:

  • 3 ripe bananas (note: if they are not fully ripe yet, you can bake them in the oven for 10 minutes at 180 degrees C until peel turns black – carefully remove, unpeel and mash up)

  • 1 tbsp melted coconut oil

  • 1/4 cup organic maple syrup

  • 1/4 cup almond coconut milk (or you can sub for milk of choice)

  • 1 tsp vanilla extract

Dry ingredients:

  • 3/4 cup whole-wheat flour

  • 1/2 cup of coconut flour

  • 1 tsp cinnamon

  • 1 tsp baking powder

  • 1/2 tbsp chia seeds

  • 1/2 tbsp flax seeds

  • 1/4 cup crushed walnuts


1. Pre-heat oven to 180 degrees C and lightly grease a tray with coconut oil (I used a mini loaf bars tin but you can use a regular loaf tin)

2. Blend together the wet ingredients (see note above to ripen your bananas faster and make them easier to mash up). You can use a nutribullet or blender to make sure the ingredients are well combined.

3. Mix the dry ingredients together.

4. Add the wet ingredients over the dry ingredients and combine until the batter is smooth and well incorporated. Pour the batter in the tin.

5. Bake in the oven for 30 minutes or until toothpick comes out clean. Let it cool for 10 minutes.

To store: let it cool for 45-minutes at room temperature then place in a glass airtight container and leave in the fridge for up to 1 week.
