Easy breakfast granola cups

I never understood why anyone would make homemade granola when you can simply buy store-ready granola - until I made these extremely delicious and super easy homemade granola cups.


Turns out - making homemade granola is incredibly easy, takes less than 10 minutes to prepare and tastes so much better than any store-bought granola I've tried (and believe me I have tried many)! Also, the best part is, I love knowing exactly what went into my granola - how much honey, maple syrup, oil or any other ingredients - you get to be totally in control.


These granola cups are not only adorable, they're also extremely delicious and will save you so much time on busy weekdays when you have to rush out to work and literally want to grab "a bite" on your way out.

Easy granola cups

To make these delicious granola cups, you will need:


- 1.5 cups organic old fashioned rolled oats (not the flakey kind - the big oats kind)

- 1/4 cup flax seeds

- 1/2 cup crushed walnuts, coarse

- 4 tbsp maple syrup

- 1 tbsp honey

- 1 tbsp coconut oil

- 1 tbsp raw almond butter

- Pinch of crushed sea salt


Toppings:


- Handful of berries of choice (blueberries, strawberries, raspberries, blackberries)

- Choice of yogurt (you can choose dairy-free coconut yogurt, or non-fat Green yogurt, or any other)


Steps:


1- Pre-heat oven to 200 degrees C and brush a muffin tin with coconut oil, lightly


2- Mix all granola ingredients in a bowl and use your hands to combine well together


3- Press 2 tablespoons of granola mix in each muffin well and press well into the sides to make a cup-like shape.


4- Bake in the oven for 15 to 18 minutes, checking on it halfway through.


5- When ready, let the granola cups cool down in the muffin tin for 5 minutes, then use a teaspoon to remove each and let them cool down completely for about 30 minutes to 1 hour before filling them up.


6- You can store these in an airtight container and leave at room temperature, and simply fill them up with yogurt and berries in the morning.


That is all! See? Easy! You can use the same granola cups recipe to make simple homemade granola - simply break up the granola into clusters for the perfect crunchy breakfast!
