Healthy pasta recovery salad

I can write a poem about carbs but now is not the right time!


Nothing like a bowlful of whole-wheat pasta and veggies as a recovery after a tough workout. Your muscles need it and will thank you for it afterwards!


This pasta salad is so colorful, easy to make and loaded with superfoods and delicious roasted vegetables.

Healthy pasta salad

For two servings, you will need:


- 1 cup whole-wheat pasta

- 2 cups baby spinach

- 1 medium sized beetroot

- 1 large carrot

- 2 spring onions

- 8-10 cherry tomatoes

- Parsley

- Olive oil

- Sea salt

- Ground pepper


Steps:


1- Pre-heat oven to 200 degrees C and wrap your beetroot and carrot in foil and place in the oven for 20-30 mins (carrot will only need 20 minutes, beetroot will take 30 minutes).


2- Boil your pasta in a bowl full of salted hot water.


3- In the meantime, chop your cherry tomatoes, spring onions, and parsley and set aside.


4- When the beetroot and carrot are roasted, let them cool down then chop them up into small cubes.


5- When the pasta is ready, rinse with warm water and place in a bowl. Mix in the baby spinach and the remaining vegetables, then drizzle with olive oil, crushed salt and pepper and enjoy!
