Easy 5 ingredient ginger snap biscuits

These orange zest ginger snap biscuits are the freest of anything I've ever baked! Check it out: they are gluten-free, grain-free, dairy-free, sugar-free, egg-free, and are basically air - I might as well call them freedom biscuits!


They require only 5 ingredients and take less than 30 mins to be ready (including prep time). A perfect snack before a workout or a treat with your morning coffee or afternoon tea.


Ginger snap biscuits

Here's what you need to make 8-10 of these biscuits:


- 6 tbsp coconut flour

- 4 tbsp coconut oil

- 1 tsp fresh grated ginger

- 2 tbsp honey or maple syrup (or any sweetener of choice)

- 1 tsp vanilla extract


Optional:

- Orange zest for topping


Steps:


1- Preheat oven to 180 degrees C and lightly brush a tray with coconut oil or use parchment paper.


2- Mix all ingredients together and let them sit in the fridge for 10 minutes.


3- Roll dough into balls and press them into a small cookie shape. If you choose to add orange zest, it adds a nice flavor and smell, you can simply grate over the biscuits and press the zest into the balls.


4- Bake in the oven for 9-10 minutes or until golden. Let them cool down completely and serve.


To store, place in an airtight container at room temperate or in the fridge for a week.
