All-green smoked salmon salad

I've only recently started being a smoked salmon fan - never really got in to the whole raw-fish thing, unless it was a once-in-a-blue-moon craving and was drenched in a whole lot of citrusy sauce to tone down the texture and fishy taste.


This dish has won me over - forever! It is so incredibly simple to put together and so tasty - with a hint of sweet orange and a whole lot of crisp from these delicious leafy greens and broccoli stems!

All-green smoked salmon salad

What you need (for one):


- 1.5 cups of kale, washed and chopped to a medium size

- 5-6 pieces tender stem broccoli

- 8-10 pieces of baby asparagus

- 6-8 cherry tomatoes

- 1/2 orange, squeezed

- 1/2 avocado

- 1/4 lemon, squeezed

- Olive oil

- Salt and pepper to taste


Steps:

1- Fill a medium pot with water, add in the tender stem broccoli and baby asparagus and bring to a boil. Once it boils, remove the baby asparagus first, wash down in cold water and set aside. Then remove the broccoli, wash with cold water, and set aside.


2- Wash and dry your kale, and pour fresh orange juice, squeezed from half an orange, and use your massage to massage the kale until it is tender. Add 1 tsp of olive oil, and salt and pepper to taste.


3- Add the kale in a serving bowl, top off with your chopped broccoli stems and baby asparagus, add the cherry tomatoes and smoked salmon.


4- Dressing: blend 1/2 an avocado with 2 tbsp of water, 1 tbsp of lemon juice, 1 tsp of olive oil, and salt and pepper to taste.


5- Drizzle the dressing on top and serve with a side of health bread - I chose "fitness bread" that is flour and yeast free and made with healthy protein-filled grains.
