Easy avocado dip (healthy snacking)

I love my food - all day, every day. I don't understand people who starve themselves before a meal and don't snack, I am the total opposite of this. Hunger is my worst enemy, I can't think straight and get pretty hangry. Can you relate?

If so you're the snacking type - just like me! I always need to have a snack handy - a small handful of nuts, cucumbers and carrot sticks, some berries, an apple and nut butter - anything - to keep me going.

The healthiest way to snack is, obviously, veggies. It's super useful to keep carrots, cucumbers, cherry tomatoes, pre-cooked crisp broccoli and asparagus, and obviously the king of all, avocados, in your fridge at all times, and a bunch of washed and ready to eat kale.

This is hardly a recipe - just a super useful avocado dip to prepare at the beginning of your week and store in your fridge for those times when you really need a snack - or a handy salad dressing, or quick dip. Here it is!

Easy avocado dip

To make this dip, it's pretty simple. All you need is:

- 1 ripe avocado, peeled and chopped and scooped out

- 1/4 tsp salt

- 1/4 lemon juice

- 2 tbsp olive oil

- 2-4 tbsp of water - depending on how thick you like your dip

- Optional: a bunch of cilantro gives a nice zesty taste

Simply blend those ingredients together and get dipping!

Store this avocado dip in an airtight container in the fridge for up to 5 days. Use throughout your week as salad dressing, veggie dip, or on your toast in the morning!
