Fig & almond butter no-bake bars

You won't believe that you can create these gorgeous breakfast bars in under 20 minutes! They are simply delicious (and yes, they are REAL)!


These breakfast bars are also super versatile. You can choose any nut butter you prefer, and any yogurt of choice whether it's dairy-free or not.

Fig and almond butter no-bake bars

Here's what you need:


For the base:

- 2 cups rolled oats (flakes are better, but the larger oats work as well)

- 2.5 tbsp organic almond butter

- 4 tbsp maple syrup (you can sub for honey or agave syrup)


Topping:

- 450 grams organic non-fat Greek yogurt (you can sub for yogurt of choice, like dairy-free coconut or soy yogurt)

- 5 medium sized figs, washed and chopped in slices


Steps:


1- Mix the base ingredients together in a medium bowl using your hands. Mix until well combined.


2- Form the base mixture into balls and place each in the crevice of your cake bars tray. Use your fingers to spread the mixture equally. Note: if you don't have a tray with cake bar crevices you can use a regular square cake loaf tray and spread the mixture equally.


3- Place in the freezer for 5 minutes.


4- Top off each base with 1 tbsp of yogurt.


5- Decorate each with fig slices and freeze for at least 5 hours or overnight.


Enjoy in the morning as your breakfast or in the afternoon as a yummy snack! Let it defrost for 15 minutes before eating to avoid a brain freeze ;)!
