The best healthy carrot cake (EVER!)

The name says it all!


This carrot cake is everything! Super soft on the inside, melts in your mouth, has a slightly crisp layer on the outside, refreshing, has a crunch, and is spiced up just the right amount. Dare I also say it might even compete with your mom's carrot cake recipe (I don't mean that mom hehehe)!


This carrot cake is also made with whole-wheat flour, is refined sugar-free and is also dairy-free - carrot cake dreams I tell ya!

Healthy carrot cake

Here's what you need:


Cake batter dry ingredients:


- 1 and 2/3 cup whole wheat flour

- 1 and 1/2 tsp baking soda

- 2 tsp ground cinnamon

- 1/4 tsp salt

- Optional extra spices: 1/4 tsp pepper, 1/4 tsp cloves


Cake batter wet ingredients:


- 1/4 cup melted coconut oil

- 2/3 cup honey or maple syrup or agave syrup

- 1 tsp vanilla extract

- 2 eggs


Cake batter final ingredients:


- 1 and 3/4 cup finely grated carrots (about 5 large carrots)

- 1/3 cup crushed walnuts


Cake frosting ingredients:


- 1/2 cup yogurt of choice (dairy-free coconut, or regular plain greek yogurt)

- 1 tbsp honey or maple syrup or agave syrup

- 1/4 cup crushed walnuts


Steps:


1) Pre-heat oven to 180 degrees C and lightly brush your cake tray with coconut oil


2) In a bowl, mix the cake batter dry ingredients together


3) In a separate bowl, mix the cake batter wet ingredients together, until properly combined


4) Pour the wet ingredients on the dry, mix very well, then add the cake batter final ingredients and mix well using a spatula (not a cake mixer so you don't blend the carrots and walnuts in)


5) Pour the batter in the cake try and bake for 35 to 40 minutes at 180 degrees C


6) Let it cool down for an hour, and preferably overnight, before you add the "frosting". For the frosting, simply mix your yogurt of choice with some honey or sweetener of choice, spread on top, and add the crushed walnuts.


Et voila!


And there you have it! The best carrot cake you ever did have! BOOM!
