Roasted veg and zoodles salad

Roasted herb butternut squash rings and sweet potato wedges on what may be the most refreshing raw zoodle and asparagus salad to date.

This makes for a delicious lunch or dinner!

Raw zoodle salad

To make your butternut squash rings and sweet potato wedges:

1- Heat up your oven to 200 degrees C

2- Chop your butternut squash into rings, and your sweet potato into wedges

3- Brush them with olive oil, sprinkle sea salt and crushed pepper and herbs of choice

4- Spread them in an oven tray and let them roast in the oven for 30-45 minutes

For the raw zoodles salad:

1- Peel then spiralize 1 large zucchini

2- Peel and chop 1 cucumber, and 8-10 cherry tomatoes

3- Boil your asparagus for 5 minutes then chop up

4- Mix the veggies together, then add a handful of coriander and chopped spring onion

5- Mix in some olive oil, crushed sea salt and pepper, a squeeze of lemon and a dash of pomegranate molasses

Top off your raw zoodle salad with the roasted veggies once ready and enjoy!
