The humble vegan

Baby spinach, cucumbers, cherry tomatoes, and lemons should be staples in your fridge at all times!


Quinoa and chickpeas should be staples in your kitchen closet at all times!


The easiest and freshest lunch to put together requires only those ingredients (and a bonus for coriander).

The humble vegan

All you need to toss together is:


- 1-2 cucumbers

- 1 cup of baby spinach

- 10-12 cherry tomatoes

- 1/2 cup cooked quinoa

- 1/2 cup organic chickpeas

- Handful of coriander leaves


For the dressing: 1/2 a lemon, squeezed, olive oil, pomegranate molasses, salt and pepper.


Have a humble, clean, and light lunch!
