Savory za'tar (thyme) & olive oil muffins

The best foods are the ones that cross over 2 of the best tasting things around. Like a food mash-up. Think about it, a donut and a croissant make a delicious crispy cronut, Oreos baked inside cookies, the spaghetti donut (that had it's 15 mins of fame), sushi burritos, you get the picture...

This is my version of two of the best tasting simple things in life: Za'tar & fluffy muffins. Is it bread or is it a muffin, now you'll wonder. Imagine the tangy delicious taste of Za'tar paired with the fluffiest texture of a muffin, finished off with that same crisp muffin top which you'd get in your classic sweet muffin.

To put it simply, these Za'tar muffins are THE best things I've baked so far - they have literally disappeared in a single day! They're so versatile, so you can have them for breakfast, as a snack, with your lunch or dinner paired with a delicious green salad. You can top them off with Labneh and some cucumbers and cherry tomatoes, and let it take you back to those sweet nostalgic memories when your mom packed your school lunch as a kid.

Savory thyme olive oil muffins

What you need to mix together:

Bowl #1:

- 3/4 cup oat flakes

- 1/2 cup 0% fat natural greek yogurt or natural plain yogurt*

- 1/4 cup unsweetened almond milk (or your choice of milk)

Bowl #2:

- 2 cups wholemeal flour**

- 1.5 tsp salt

- 4 heaping tbsp of za'tar (thyme)

- 1 tsp baking powder**

- 1 tsp baking soda**

Bowl #3:

- 2 room temperature egg whites

- 1/4 olive oil

Separately, for the end:

- 3/4 cup of unsweetened almond milk (or your choice of milk)

*Can be substituted for 1/4 cup coconut yogurt, if you do this, add a pinch more salt and an extra half a spoon of Za'tar to make up for the sweetness in the coconut yogurt

**These can be substituted for Gluten-free products. You can find all the versions of these in GF in the organic store or the organic section of Carrefour


1 - Preheat oven to 180 degrees C and brush your muffin tin lightly with oil and coat with a thin layer of flour

2- Mix the ingredients together in the bowls (as above)

3- Add the ingredients in bowl#3 to bowl #1 and mix well

4- Alternate between adding ingredients in bowl#2 and the 3/4 cup of milk to the mixture, combine the ingredients very well

5- Use an ice-cream scooper to scoop out the mixture into the muffin tin crevices

6- Bake in the oven for 30-35 minutes or until edges and top turn a golden color

7- Let it cool down for 10 minutes before transferring, and dig in to the fluff!

Have them plain or you can top them off with Labneh + veggies - delicious either way!

To store: place in airtight container and leave in the fridge for up to 7 days.
