Healthy orange cake bars (with ginger honey and hazelnuts)

What do you get when you mix orange zest, ginger, honey, and hazelnuts? A recipe that can’t go wrong! Don’t give up on your baking skills just yet, there’s no going wrong on this one. These breakfast cake bars are just as delicious as they sound! Follow the recipe below to make these perfect cake bars, it’ll only take you 15 minutes to prep the ingredients and 35 minutes to baking time (watch an episode or 2 of Friends in the meantime!)

Orange cake bars

Here’s what you’ll need: Dry ingredients - 2 cups wholemeal flour - 1.5 tsp baking soda - 1/2 tsp salt - 1.5 tbsp fresh orange zest Wet ingredients - 2 eggs - 1/4 cup melted coconut oil - 1/2 cup fresh orange juice - 1/3 cup honey or maple syrup - 1/4 cup plain Greek yogurt Topping: - Organic plain greek yogurt - Honey - Fresh grated ginger - Hazelnuts Steps: 1- Preheat oven to 180 degrees C and brush your cake tin lightly with coconut oil (does not have to be a cake bars tin) 2- Mix your dry ingredients together in a medium bowl 3- Mix your wet ingredients together in a separate bowl 4- Gradually add the wet ingredients to the dry ingredients and mix well 5- Pour your batter in your cake tin and bake for 35 minutes or until toothpick comes out clean and the top turns golden 6- Let your cake cool down for 10 minutes before removing it from the tray For the topping, mix some grated ginger and honey to taste with fresh plain Greek yogurt and top up before serving. Add some hazelnuts on top for a crunch and enjoy!
